Stufed Green Peppers

Stuffed Green Peppers
Makes 4 servings

4 large green peppers, washed
½ c. onion, peeled and chopped
1 lb. ground turkey
1 ½ c. tomato sauce (no salt added)
1 cup rice, cooked
black pepper to taste


Preheat oven to 350 degrees. Boil water in a medium saucepan (big enough to hold 4 peppers at once).

Cut around the stem of the peppers; remove the seeds and the white part of the inside.  Cook the peppers in boiling water for three to five minutes.  Drain well.  In a saucepan, brown turkey.  Add rice, onion, ½ c. tomato sauce and black pepper.  Stuff each pepper with the mixture and place in a casserole dish.  Pour remaining sauce over the peppers; cover and bake for 30 minutes.
