Stufed Green Peppers
Stuffed Green Peppers 4 large green peppers, washed
Cut around the stem of the peppers; remove the seeds and the white part of the inside. Cook the peppers in boiling water for three to five minutes. Drain well. In a saucepan, brown turkey. Add rice, onion, ½ c. tomato sauce and black pepper. Stuff each pepper with the mixture and place in a casserole dish. Pour remaining sauce over the peppers; cover and bake for 30 minutes. Per serving: 410 calories, 10 g total fat (3 g saturated fat), 90 mg cholesterol, 53 g carbohydrate, 5 g dietary fiber, 5 g sugars, 26 g protein, 125 mg sodium, 240% Vitamin C, 25% Iron, 6% Calcium, 30% Vitamin A.
