Cookie Crust

½ cup butter or reduced-fat margarine

½ cup sugar

1 teaspoon vanilla extract

1 large egg

2 cups flour

2 teaspoons baking power

Cheese Spread

8 ounces cream cheese non-fat or light

½ cup sugar

1 teaspoon vanilla extract

Fruit Topping Ideas

1 cup sliced Strawberries or kiwi, bananas, pears, peaches, or blueberries

Preheat oven to 375 degrees. For crust, cream margarine, sugar, vanilla, and egg until light and fluffy. Add flour and baking power, mix well. Spread mixture about 1/8 inch on a pizza pan, baking sheet or 9 inch by 13 inch pan. Bake for 10 to 12 minutes or until lightly browned. Cool

 

For spread, mix together cream cheese, sugar, and vanilla. Spread on a cooled cookie crust. Arrange fruit on top of pizza. Refrigerate until serving time.

 

Per serving: 240 calories, 8 g total fat (2 g saturated fat), 15 mg cholesterol, 35 g carbohydrate, 1 g dietary fiber, 18 g sugar, 6 protein, 280 mg sodium, 15% Vitamin C, 6% Iron, 10% Calcium, 10% Vitamin A.
