Bohemia, NY / http://www.myprgenie.com/ / ACCESSWIRE / April 17, 2014 / Flavor Your Life, a European Union funded campaign that is dedicated to providing the latest in olive oil news, shares a recipe for a Three Color Salad prepared with organic olive oil that is perfect for spring barbeques.  This recipe offers a healthy alterative to starchy side dishes.  The vegetables used offer vitamins and antioxidants, while the organic olive oil offers heart healthy monounsaturated fatty acids.  Even the buffalo mozzarella offers a lower-fat alternative to traditional mozzarellas and higher protein content.  This easy, decadent salad is also the perfect addition to large gatherings, such as Easter feasts or other holidays.

This recipe calls for:

2 packages of buffalo mozzarella

4 tomatoes

3 cucumbers

Arugula

Capers

Lemon juice

Organic olive oil

Salt and pepper to taste

Fresh basil

First take the tomatoes and cucumbers, wash, and cut them up into bite-size pieces. Grab a large plate.  Place the cucumbers on the bottom of the plate. Place the mozzarella towards the middle of the place. Lastly, cover the rest of the plate with the tomatoes.

After placing all the vegetables and mozzarella on the plate, sprinkle a handful of arugula, capers, and fresh basil on top. Then add a few squeezes of lemon juice followed by a few drops of organic or Italian olive oil. Add some salt and pepper to taste if desired.
